Mr. Lemon Bar

LEST YOU THINK THE ONLY THING T and I are good at cooking is spite and insults (as in our fritter debacle), I’m happy to share with you the results of our latest kitchen endeavor: songs, lemon bars, and smiles. T took the helm, producing his favorite dessert with ease from his go-to Canyon Ranch recipe. Above, he’s taking a moment from diversifying his stock portfolio to share with the world why he loves making (and then eating) lemon bars. below are some delectable photos and the recipe. But I’ll have you know that the dessert comes out better if you sing a song about it first.

Canyon Ranch Lemon Bars

Ingredients:

1/2 cup and 3 tablespoons unsalted butter, room temperature
1/3 cup evaporated cane juice (we use sugar)
1 tablespoon lemon rind, grated
1 2/3 cup all-purpose flour
1 1/2 cup evaporated cane juice
4 tablespoons all-purpose flour
1/2 teaspoon baking powder
5 large eggs
3 tablespoons lemon rind, grated
2/3 cup fresh lemon juice
1 1/2 teaspoon pure vanilla extract

Instructions

1. Preheat oven to 350º.
2. In a food processor, blend together butter and first amounts of evaporated cane juice and lemon rind. Gradually add in flour to form soft crumbs. In a 9”x13” baking pan evenly press crumbs to form a crust. Bake for 15 minutes.
3. In a small bowl, stir together second amounts of evaporated cane juice, flour and baking powder.
4. In a large mixing bowl, with a hand held mixer, beat eggs well. Gradually add flour mixture to beaten eggs. Stir in lemon peel, lemon juice and vanilla extract. Pour lemon mixture over baked crust. Return to oven and bake for 20 minutes or until top and sides are light brown in color.
5. Allow to bars cool. Cut into 32 squares.

I know a little bit about fritters…actually I know a little bit about brother/sister relationships too. I so enjoy your writing as it is real life experiences put into words. (A particularly difficult thing to do well). Way to take the lemons of the day and turn them into lemon bars!

Magnificent ode to the Lemon Bars. I’m a big fan of T now. The ‘crank’ calls and his musical skillz alone make me want to organize a fan club. BTW, Lemon bars have *always* been one of favs too; trying your variation on the classic this weekend.

@Other T – I know! Well he’s always had a knack for these half-chant half-sing ditties. Remember the “say your name” recording on our home voicemail? That’s a timeless T rendition.

How lovely. The song “Dream On,” complete with scream, left over from American Idol had been raging in my head for two weeks. Only the Lemon Bar Theme could have ever displaced it. So grateful. So catchy. So totally stuck in my head now that I’m working on new verses.
