Prepping for Picnics

MY FIRST PICNIC of the season is breathing down my neck: it’s the capper to the kids’ last day of school. Sounds lovely, right? Well, maybe for someone less spent than I am at the moment. With none of my own cooking creativity left to mine, I decided to delve into the archives here at TSP to see what past picnic resources I might unearth. Are you in need of outdoor eating support? Read on.

Fried chicken isn’t so healthy (though I do LOVE it) but the roast chicken and accompanying kasha and asparagus salad I made for dinner with my BFFs at my high school reunion would transfer beautifully into a room-temp, al fresco meal.

What picnic is complete with out potato salad? We’ve got loads of different versions, thanks to our much-loved Ladies’ Auxiliary cookbook collection.

A good picnic demands something sweet to end the meal on an up note. My to-die-for chocolate cookies are perfect.

Hmm…. we never did have that “fear of frying” tutorial… I’m still afraid!

Anyways, the thing I always make for picnics is Martha Stewart’s Pressed Picnic Sandwich. I find the key is to to make homemade roast peppers — much better than canned. Oh, and make sure it is soaked enough. It always gets mauled by the parents at the last-day-of-school picnic, and I get requests for recipes.

I often pair it with a big glass cookie jar of watermelon gazpacho, especially on hot days.

And for dessert, little tiny wedding kolacky…

Yes, I have every faith that the BFF dinner food would make a delightful picnic. Wish I could be there!

In Florida we go from AC in the Car to AC in the Store and back again finally in the pool observing local wildlife. Geese, ducks and other pond residents who entertain us while we float around our clean pool water, protected from bugs by a screen. Dinner will be what was available from the grocery Deli that we both agreed on. You are invited to come and share.

On the 4th we did make your own sandwich, but the best was prosciutto with humboldt fog cheese, lettuce and . . . .steamed asparagus spears. The slender, slightly crunchy asparagus just MADE it great. I brought an extra bag or crudite and everyone was stuffing asparagus into their sandis. With chips, pickles, water and a bag of lemon Quadratini and were were in business.
