Honestly, the best book ever for the beginning or even the experienced cook is The Joy of Cooking. I think recent editions have messed it up a bit, but my 1975 copy is much thumbed and butter-spotted. Hey, it even shows you how to skin a squirrel. A book that comprehensive (and, in tulip season, cathartic) can’t be bad.

Have several favorites, but as far as simple and general recipes go, I really like the Southern Living ‘Ultimate’ Cookbook.
